TextEdit PDF text encoding changes

Hi there,

I am opening an .mp3 file in TextEdit trying different text-encoding. When saving the text file back to .mp3 everything is fine.

I would like to save the text file as a PDF for a digital signature. This would solve copyright issues for basically any musician out there. However, for this to work, the PDF has to convert back to text and then .mp3 using exactly the same text file encoding. Else the .mp3 cannot be played and therefore the signed document proving I am the composer of my song is worthless. (I am not good in writing sheet music so that takes up way too much time I could use to write songs).

Unfortunately I don't know a lot about text and PDF encoding, so I cannot get the PDF to save without changing the text encoding. I think the problem arises while saving the document as PDF. I used "PDF to Text" to convert the PDF back to Unicode (UTF-8) and it's nearly the same, but not quite, so it doesn't work.

Can anyone tell me which text format in texteditor to use? Or what PDF maker won't change the format? Or is there any other way to solve this problem?

OS X Yosemite 10.10.5

Memory: 4 GB 1600 MHz DDR3

TextEdit Version 1.10 (319)

PDF Encoding: Mac OS X 10.10.5 Quartz PDFContext

PDF to Text Version 1.1 (2014.09.23)

I tried text encoding:

Unicode (UTF-8)

Western (Mac-OS Roman)

Non-lossy ASCII

Western (Windows Latin 1)

I also tried opening in Microsoft Word for Mac 2011 Version 14.7.1 (161129) but the document shows only 1-3 lines per page so the PDF is way to large to save or sign.
