Watch pairing can happen only after resetting the watch?

While trying to un-pair my headset, I accidentally clicked on "Forget Device" for the watch. Now, my phone and my watch are not connected (ofcourse they both have my apple ID). I did not notice what I had done at this point.

Next day: I did an intense workout and wanted to see it on my phone. Now I realized that the phone and the watch were not connected. To connect it back to the phone, I have not found another way than to reset my watch and then use the Watch app on the phone to pair it.

Problem is, I want to connect the watch to the phone again but without loosing the workout information from the workout I did while the two were no longer connected (because I had forgotten the device from the bluetooth settings on my phone).
