How to permanently turn off encrypting and digital singing of emails (Mail.app)?

How can I permanently turn off encrypting and digital singing of emails by default in Mail.app?

I' m sure that there's a way to do this using the 'defaults write' command in the Terminal.app, but I didn't find any documentation about the parameter to use.

If anybody knows this, I would be happy.
