TimeMachine is backing up excluded folders

Im on a MBP M4 Tahoe and i used TimeMachine for a while. Now today i started a backup and was wondering why it was so big. I realized that TM is also using excluded folders e.g. ~/Music. I also realized that i have no control over the backups. I have no gear icon and i can not delete files or whole backups, i can just make them and restore items.

Backups are made on a Synology NAS, maybe thats the problem.

How can i delete backups - is there a way to delete specific files?
