Will Catalina not work on Mac Pro 5.1?

I suggest you should simply try. If you click on the Apple menu on the first line something like "About this Mac", and next on the box "upgrades", the system will answer something like "your system needs no updating" so you will know Catalina is not available for your Mac. Soory I can't be more specific, my Mac speaks French only.
