Hi,
Im looking to keep midi tracks record enabled when I select other channels while recording? Is there a permanent solution I can find? I can't find a reliable solution anywhere.

Make sure you click on the R button on each track. They should both be flashing Red and then you can type "r" to start recording. You will need to click on the R buttons again to turn them both off.
And I believe you can even have the midi track recoding and an audio track at the same time. Although I've not done this myself.
You could press the record enable button before you start the recording.
This doesn’t help that. Even if I press record enable after recording, it’ll still move to another track I select after the recording has started

Press it before the recording.
I do press it before. It’ll still go to whatever track I press next, even an audio track
