So, I want to buy the bundle, and as a student, the discount would be amazing to use. But in my country's store (while listed on the website and promoted on the website) it shows as "unavailable/out of stock". (Mexico)
I was wondering if I can buy it from the US store and redeem the apps on my (MX) account.

The promotion might be region specific. You might be able to have someone you know in the U.S buy the bundle with your Apple Account, but you may not be able to redeem your purchase in Apple Mexico App Store. Your best result would be to call Apple Support for help on this.
