Screen Capture programs like QuickTime and OBS don't work. OBS just shows a black screen, QuickTime at least gives the hint that it's not allowed to record the screen due to my privacy settings.
The real problem however is that under System Preferences > Security > Privacy > Screen Recordings there are NO OPTIONS. Neither OBS nor QuickTime are listed there, thus I can't give them permission to record my screen.
I don't know OBS, but the QuickTime Player should ask you, to allow the Screen Recording in the setting. After that the App should be shown in the System Preferences.
With macOS you have another App to record the screen. In German its called Bildschirmfoto:

Okay so the problem kind of solved itself. When I tried again for the sixth time, after 2h, QuickTime was listed. dafuq. And I noticed I wasn't on the newest version of Catalina and after I updated OBS was finally shown in Preferences as well.
