Accessing eSim on my iPhone 14 pro after it has already been set up

I am traveling in Spain and need to add another sim. I want to find out how I can access eSim now and whether I can choose my own cell phone provider or does Apple only allow certain ones.

If you are out of your country and you didn’t call your cellphone carrier to allow you to use tour iPhone out of your country Apple can’t do that because you should set that up before traveling with your carrier
