Inzwischen habe ich Version 14.1 auf dem Iphone und wollte ein Backup per iTunes ziehen. Aber das Iphone wird weder in iTunes erkannt noch im Finder angezeigt. Am USB-Kabel kann es nicht liegen, denn Fotos findet das Iphone problemlos und lässt die Verwaltung der Bilder zu. Der Mac läuft unter High Sierra 10.13.6. Ich hoffe, es gibt eine Lösung ohne Neuinstallation von iTunes.

vielleicht helfen Dir diese Hinweise aus dem MacRumors Forum weiter:
As soon as I connected my iOS 14 iPhone to my macOS High Sierra, a small compatibility update popped up for installation.
Once I did that, I restarted iTunes and was able to sync/backup my iPhone! W00T!
I finally got a knowledgeable person at Apple and he helped a lot. I had to do a manual download and reinstall of iTunes. Then when I plugged in my phone, iTunes recognized it, provided a link to download the patch and I was able to back up my phone.

Ein Fall, den ich aus der Ferne betreuen muss hat ebenfalls das von Dir geschilderte Problem, berichte bitte ob die obigen Tipps bei Dir zum Erfolg geführt haben.
