Used original Apple SSD's should be available in the internet.
In the internet you'll also find some user reports about using Transcend JetDrive SSD's and OWC Aura SSD's.

Did you think using an M-Key Samsung NVMe like these two?
This might work in your 2017 MacBook Air but you'll need an adapter which makes M-Key fit into NGFF.
