Side car and Universal control between MacBook Pro 2016 and iPad Pro 1st gen

I have a macbook 13-inch from 2016 (Monterey 12.7.3) and an iPad pro 12.9 1st gen (iPadOs 16.7.5).
Despite their age they are still working great for me and I really want to make the best use of them for a few more years. In particular, connected together, they are a great portable multi-display setting.
The issue I have is that Universal control/Sidecar is working very randomly in the following sense
- wireless screen extension is almost always not working at all (The device timed out.),
- wireless mouse and keyboard sharing is usually working but is instable and slow
- wired (USBC to Lightning) screen extension is working perfectly on some days and not at all on others (The device timed out): today it worked perfectly for a few hours then I restarted the iPad just for the experiment) and started to receive the device timeout error...
- wired (USB C to Lightning) mouse and keyboard sharing is working perfectly when the option is available but the option is not always visible.
I have noticed that I am getting better results when iPad is in Airplane mode with wifi turned off, but again, under these conditions the connection seems to work or not randomly.
Ideally I prefer to use screen extension as multitasking is fairly slow on this iPad and
to be honest I don't really care about wireless connection: reliable wired setting would be pererfect.
So what I would like to know is how to make sure that wired screen extension is always working?
