Contacts can't be accessed when writing a new mail

Hi guys!

I have issues finding my old contact email addresses using Apple Mail on M1 Monterey. When I write a new email, it seems that only those email addresses are available that I have saved as a contact. When I use the general search, however, I get all the old email addresses from all of my contacts. The email addresses are displayed, but I cannot copy them to the clipboard or use them for a new email. How can I access this list?

Also, even though Mail finds a lot of my old contact emails, it seems they are not coming from the emails I stored - often the search result is empty when I select a contact that the search found - so I wonder where this search result is coming from. Is there an additional list or cache someplace?
